The ADS1252 is a precision, wide dynamic range, delta- sigma, Analog-to-Digital (A/D) converter with 24-bit resolu- tion operating from a single +5V supply. ... An effective resolution of 19 bits (2.5ppm of rms noise) is achieved for conversion rates up to 40kHz.

Brian Taylor resolution is one thing and accuracy another. Also you need to see specs for ADC does it have Gain amplifier and what ranges it can do. Then you can plan resistor dividers considering what voltages you plan to measure.
I am working on similar project where I am measuring current as a product of voltage difference and relation to current in liquid cell. Trying to recreate Nikola Tesla current meter.
One thing I am not clear why such products don't have mapped values in MCU to improve accuracy over range if its not linear. As evryone complains about it and want linear results from components which raises costs greatly. That seems could improve it drastically if its calibrated and mapped to be made linear result and more accurate across the range.

The ADCs I read about have differential inputs. Would a Wheatstone bridge help in improving input accuracy?
